Fernando Adell is a fourth-generation Iberian pig farmer in the Cordoba region in Spain. He has invested in a processing facility to cure the hams to maximise profits from the value chain.

Iberian ham has a particularly vibrant, red colour due to its higher myoglobin levels. The intermuscular fat is as a result of the pigs‘ active lifestyles, roaming the hills as they search for acorns.
