An easy, joyous cake full of flavour and holiday spirit-perfect for sharing with loved ones.

Ingredients

  • 500g dried fruit mix
  • 375g self-raising flour
  • 300ml liquid – brandy, rum, ginger beer, chocolate milk or anything you think will work.
  • 3g mixed spice

Method

  1. Put the dried fruit mix in a good sized bowl, add the liquid and leave for 24 hours.
  2. Add the flour and mixed spice, and mix vigorously.
  3. Spoon the mixture into a muffin container or tray
  4. Bake at 180°C for 35 minutes.
