Pork koftas with apricot and ginger

These patties are bursting with flavour, and the Asian spice mix complements the pork superbly.

Pork koftas with apricot and ginger

SERVES 4

  • 1 Tbsp olive oil
  • 1 chopped onion
  • 1 finely chopped garlic clove
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1/2 tsp star anise
  • 500g pork mince
  • 5cm piece of finely grated fresh ginger root
  • 20 finely chopped dried Turkish apricots
  • 3 Tbsp chopped fresh parsley
  • 100ml full-cream natural yoghurt, mixed with 2 Tbsp chopped fresh parsley and 1 Tbsp lemon juice, to serve.
  1. Heat the oven to 200°C.
  2. Heat the oil over moderate heat in a pan, and fry the onion and garlic until the onion is translucent.
  3. Tip the cooked onion and garlic into a mixing bowl, and mix with the remaining ingredients.
  4. Divide the mixture into four, and mould each around a skewer.
  5. Place the skewers in a greased oven dish and cook for 20 mins. Serve with the yoghurt dressing and flavoured fried rice or toasted flatbread.
