
SERVES 4
- 1 Tbsp olive oil
- 1 chopped onion
- 1 finely chopped garlic clove
- 1 tsp salt
- 1/2 tsp white pepper
- 1/2 tsp star anise
- 500g pork mince
- 5cm piece of finely grated fresh ginger root
- 20 finely chopped dried Turkish apricots
- 3 Tbsp chopped fresh parsley
- 100ml full-cream natural yoghurt, mixed with 2 Tbsp chopped fresh parsley and 1 Tbsp lemon juice, to serve.
- Heat the oven to 200°C.
- Heat the oil over moderate heat in a pan, and fry the onion and garlic until the onion is translucent.
- Tip the cooked onion and garlic into a mixing bowl, and mix with the remaining ingredients.
- Divide the mixture into four, and mould each around a skewer.
- Place the skewers in a greased oven dish and cook for 20 mins. Serve with the yoghurt dressing and flavoured fried rice or toasted flatbread.
